Wayne Coetzer has been the general manager of The Oyster Box for sixteen years. He studied personnel management in Pietermaritzburg and completed his Certified Hotel Administrator designation in hospitality. He became the in-house trainee at the Champagne Castle Hotel in the Drakensberg under the watchful eye of renowned South African hotelier Conor O’Hagan Ward. He then worked as the director of food and beverage for the newly opened five-star Covent Garden Hotel and later the famous Dukes Hotel in St James’s Square. He has also worked at The Royal Hotel and the Hilton Durban. When he is not busy running The Oyster Box, he can be found fishing with his boys, Jack and Tom, along the coast or in one of the many trout dams in the Natal Midlands. Born and bred in Cape Town, Jane Broughton has been freelancing as a food and travel writer for fifteen years.
